Olijfolie Speculaas Brokken

Edith's aan Johannes van Dam ontleende brokken speculaas gemaakt. In gehalveerde hoeveelheden. In plaats van 75 gram boter gebruikte ik 60 gram olijfolie. Dat was geen succes. Wel erg lekkermaar veel en veel te zacht. Bij een tweede poging voegde ik 15 gram Turkse 10% yoghurt toe. Dat leverde een beter resultaat. De speculaaskruiden maakte ik zelf. Dit weegschaaltje kwam daarbij goed van pas.

[Olijf]olie is lekker & makkelijker te verwerken dan boter. De tweede versie onderscheidde zich van de eerste door de toevoeging van de yoghurt. Weet niet waarom maar door de toevoeging van de yoghurt werd 't allemaal een stuk koekiger.
