I cleaned & quartered 500 gram apples [Beauties Of Boskoop], cooked them until they were soft, added 2,5 gram in cold water soaked gelatin and dissolved the gelatin in the apple sauce. I cooled & freezed the apple sauce and defrosted the frozen apple sauce in a pan with strainer & coffee filters during a day or two after which I had 0,75 dl apple juice. Gelatin filtering apple sauce is not a good idea.
I put 75 gram pine nuts, 15 gram in water soaked and squeezed white bread, 1/8 teaspoon salt, 1 teaspoon dried lavender flowers, 1 crushed clove garlic and the apple juice in a foodprocessor & pureed everything until a sauce with a consistency of mayonnaise.
It didn't taste bad but I should have added some lemon juice.
