In spite of my firm belief that I can eat anything my hosts choose to serve me, there are a few high-protein tidbits that I hope never to have to cope with, and almost all of them are discussed cheerfully in this extraordinary book.

In Unmentionable Cuisine beschrijft Calvin W. Schwabe maar liefst 21 manieren waarop in de Filipijnen, Spanje, Libanon, dde Verenigde Staten, Frankrijk, Italië, China, Hongarije en Singapore kikkerbillen worden bereid.
Maar eerst:
Frogs are killed by quickly severing the spinal cord between head and first neck vertebra with a sharp knife. After skinning, the frogs are cut across the body just ahead of the pelvis (...). The feet are then cut off and thrown away with the rest of the body. The joined pairs of legs are soaked in several changes of ice water for 4-6 hours (which swells the meat). Finally, they are thoroughly dries between paper towels.
- kikkerbillen [diepvries; verkrijgbaar bij de betere toko]
- olijfolie
- peper & zout
Smeer de kikkerbillen in met olijfolie en bestrooi ze met peper en zout. Gril ze in 2 x 6 minuten gaar.
