  • Loi de la juxtaposition : un ingrédient paraîtra fade s’il est placé à côté d’un autre ingrédient de même goût plus soutenu. Mais ce dernier sera alors rehaussé.
  • Loi de la longueur : un goût paraîtra plus long en bouche s’il est mis dans plusieurs contextes de rétention différents.
  • Loi du support : tout ingrédient en masse peut servir de support à des composés aromatiques ou sapides pourvu que sa concentration en ces molécules soit inférieure.
  • Loi de la constitution : un plat aura davantage de longueur s’il a une tête, un corps et une queue.
  • Loi de la dominance : une masse d’une saveur majoritaire doit toujours être réveillée par une autre masse.
