Stoofpeertjes

Na raadpleging van Volmaakte Grond-Beginzelen Der Keuken-Kunde,  Prisma Kookboek van Mia Snelder, de 27e druk van de door Anne Scheepmaker herziene Wannee en Time To Poach The Pears  van Maison Dorré Trifles kwam ik tot de volgende versie van stoofpeertjes.

  • 8 stoofpeertjes: (met een dunschiller) geschild
  • witte wijn & water
  • 1 steranijs, 1 gedroogd pepertje, 1 laurierblad
  • 30 gram suiker
  • maizena

Doe de stoofpeertjes met specerijen in een pan met zoveel vocht (half wijn | half water) dat de stoofpeertjes half onderstaan. Laat de stoofpeertjes op een laag vuur in ongeveer 2 uren gaar koken. Voeg een half uur voor het einde van de kooktijd 30 gram suiker toe. Verwijder aan het eind van de kooktijd de specerijen en bindt het vocht met maizena.
