Olijven Boter Vis

Het zal wel vloeken in de kerk zijn maar het idee voor dit gerechtje ontleen ik aan Mediterranean monkfish poached in black olive oil with mustard greens van Marcel Bras. Heb het op z'n Marcel Bras' geprobeerd maar ben daar bij lange niet in geslaagd.  Per persoon:

  • 25 gram (ongeveer 50 gram bruto) zoute zwarte olijven
  • 1 knoflookteentje
  • 25 gram boter
  • 1 (boter)visfilet

Ontpit de olijven en hak ze samen met de knoflook heel erg fijn. Smelt de boter op een laag vuur. Warm de olijvenknoflookgehakt in de boter. Gaar de visfilet in de olijvenknoflookboter in twee keer 5 minuten (5 minuten op d'ene kant & 5 minuten op d'andere kant) of langer als dat nodig is.
