Muffins Niçoise

  • 2 eieren 
  • 1 dl olijfolie 
  • 100 gram Griekse yoghurt
  • 1/4 theelepel zout 
  • 2 hardgekookte eieren: geprakt 
  • blikje ansjovis: visjes uitgelekt op keukenpapier & in stukjes gesneden 
  • 18 zwarte olijven: gehakt
  • 200 gram gezeefd zelfrijzend bakmeel
  • 12 kleine siliconen muffinvormpjes

Klop met een garde eieren, olijfolie,yoghurt en zout. Roer ei, ansjovis en olijven door het mengsel. Schep gezeefd zelfrijzende bakmeel door het mengsel. Verdeel het beslag over 12 kleine siliconen muffinvormpjes. Bak de muffins in een op 180 graden Celsius voorverwarmde oven in 30 minuten gaar. Laat de muffins 5 minuten afkoelen voor ze uit de vormpjes te halen. Laat de muffins verder op een taartrek afkoelen.
