Dadels rijpen in vier fasen: van kimri naar khalal naar rutab naar tamar. De dadels die nu vers te koop zijn zitten in de khalal fase. Ze zijn geel, zoet en knapperig als appels. Dadels rijpen door na de pluk en khalal dadels bewaard bij kamertemperatuur komen in de rutab fase terecht. Ze zijn dan bruin, zacht en zoeter dan zoet.
